Moist Vegan Brownies. Oil Free, Gluten Free, Refined Sugar Free, Nut free.

Ingredients:

  • 2 cups of Gluten Free Oats (blended into flour)
  • 3/4 cups cocoa powder
  • 1.5 cups of Coconut Sugar
  • 7 Medjool dates
  • 1 tsp Himalayan salt
  • 1 tsp aluminium free baking soda
  • 1 tsp baking powder
  • 2 tbsp chia seeds
  • 2 tbsp ground flax meal
  • 1 tsp Vanilla extract
  • Optional: 1-2 tbsp of Brewers Yeast (really great for breastfeeding, protein and vitamin B)
  • Optional: Chocolate chips

Instructions:

Set aside and let sit and soak:

  1. Chia seeds with one cup of water (stir).
  2. Dates without pits with one cup of water or enough to cover the top of the dates.

Mix:  The gluten-free oats in flour, cocoa powder, coconut sugar, baking powder, baking soda, flax and salt into a bowl (you can also add the brewer yeast here).

In your high speed blender, combine dates, the date soaking water, soaked chia seeds and vanilla extract. Blend until smooth.

Add your blended chia and dates to the dry mixture in your mixing bowl. Mix until all powder chunks are gone (Add water as needed).

Place in a brownie pan. Grease with vegan butter or coconut oil or we can also use wax paper or a nonstick pan.

Bake at 350F degrees for 25-30 min
